Instructions
Step 1
•Preheat oven at 180•C
Step 2
•In a pan, heat olive oil on medium heat & cook onions for a few mins to soften.
Step 3
•Add minced meat & break it down, then add spices. Continue to mix & break down meat till cooked through. Add garlic & cook for 1 min.
Step 4
•Add pine nuts & mix through. Taste & adjust seasoning. Remove from heat to cool.
Step 5
•Stuff the koosa with the meat, filling it all the way to the top.
Step 6
•In a pan, heat oil on medium high heat, add the koosas & sear on all sides to take color and soften a little (you may need to do this in batches).
Step 7
•Transfer the koosa to a baking pan, cover with foil & bake for 30-45 mins depending on your oven (until softened & cooked through).
Step 8
•Start by making the coriander mixture. Add olive oil to a pan on medium heat & add the garlic & coriander & cook for 2 mins. Set aside for later.
Step 9
•In a bowl, mix the yogurt & corn flour (OFF HEAT).
Step 10
•Run it through a sieve directly into your pot (this guarantees to remove any clumps of corn flour).
Step 11
•Add water & mix with a whisk. Now turn on the heat to medium high & start mixing.
Step 12
•IMPORTANT - Mix continuously in 1 direction ONLY for 10-15 mins straight until it starts to boil & thicken (to test, the back of your spoon should be lightly coated). Do not stop mixing before this happens so the yogurt doesn’t curdle/split.
Step 13
•Reduce heat to low, add salt & koosa. Add the mint & coriander mixture. Mix through, taste & adjust seasoning if needed. Serve with rice & enjoy!
