1chicken thigh
cooked, skin, bone and visible fat removed, roughly shredded
200gdried long-grain rice
cooked and cooled
50gcooked peeled prawns
30gbean sprouts
rinsed
2 Tbsplight soy sauce
1egg
beaten
2spring onions
finely sliced
Instructions
Step 1
Spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the bacon, mushrooms, ginger, beans, carrot and peas, and stir-fry for 2-3 minutes.
Step 2
Turn the heat up to high. Stir in the chicken, rice, prawns and bean sprouts and stir-fry for 2-3 minutes or until piping hot.
Step 3
Stir in the soy sauce or tamari, then drizzle over the beaten egg. Stir-fry for a further 2-3 minutes or until the egg is cooked and scrambled. Remove from the heat, sprinkle over the spring onions and serve hot.
