Easy Baked Tofu Zucchini Bites

Instructions

Step 1
Preheat an oven (or air fryer) to 180°C and line a baking tray.
Step 2
Press tofu to remove excess water and grate.
Step 3
Grate zucchini and press with hands to remove excess water.
Step 4
Mix together all ingredients in a large bowl. Roll into balls (approx 12-14) and cook in the oven for 20-30 minutes, turning halfway. Alternatively, cook in the air fryer for 10-15 minutes, turning halfway.
Step 5
Voila. Remove from the oven and serve hot with a side of hummus or in a buddha bowl.
