Salmon Loaded Baked Potato

Instructions
Step 1
Scrub/wash your potatoes really good and then rub the potatoes with olive oil and season with salt and black pepper. Place the potatoes in the oven or air fryer basket and cook at 400°F for 45 minutes-1 hour. ( cooking time depends on how big the potatoes are) you'll know your potatoes are cooked through once a knife easily pierces through the center
Step 2
Carefully cut off the top of the cooked potatoes (lengthwise) and then using a spoon, scoop out the insides into a bowl. Then add in chopped scallions, chopped parsley, salt/black pepper/ garlic powder/ paprika (season to taste) , chopped beef bacon (cooked), steamed broccoli, Parmesan cheese, cheddar cheese, heavy cream, sour cream and mash until smooth. Spoon the potato mixture back into the potato shells, top with cheddar cheese, and place back in the oven for 10-15 minutes until hot and the cheese is melted
Step 3
Salmon bites: For your salmon, you’ll need to remove the skin and cut into 1-1.5 inch cubes. Season with Cajun seasoning, old bay seasoning & Italian seasoning. In a large skillet over medium high heat, heat 2 tablespoons of butter, add in your onions & green peppers. Sauté the peppers for 3-5 minutes and then add a bit of Cajun seasoning/oregano. Then add your salmon pieces to the pan and cook both sides for 2-3 minutes. (Tip: cover the pan to cook the inside faster and finish softening your peppers/onions)
Step 4
Creamy cheesy cajun sauce: In large skillet add butter and stir in minced garlic. Then you will pour in your heavy cream, cream cheese (optional) cajun seasoning of your choice, salt/ black pepper, old bay seasoning & chopped parsley. Make sure to taste and adjust seasoning as needed. Don't forget to add lots of shredded Parmesan cheese! (Optional: add shredded cheddar cheese if you like it real cheesy)
Step 5
Top the baked potatoes with your salmon bites and pour the creamy cajun sauce on top. Garnish with chopped parsley and serve immediately 🤎
