Ingredients
4 servings

1 lbchicken breast
cut into chunks

1 Tbspolive oil

¼ cchicken broth

2zucchini
sliced

2bell pepper
cut into chunks

1crown of broccoli

0.5Red Onion
Cut into chunks-not pictured in the video

2 crice
cooked

2 Tbspcajun seasoning
more or less depending on how spicy you want it

1 tspdried parsley

¼ tspred pepper flakes

salt
to taste

Instructions
Step 1
Place chicken in a bowl and season it with salt and pepper and stir. Then add olive oil and Cajun seasoning.

Step 2
Cook the chicken in a large skillet on Medium-Medium High for 5–7 minutes, depending on how large your chunks area. Remove chicken and set aside, leaving the chicken juices in the pan.

Step 3
Add the chicken broth then the veggies and season with salt/pepper and any other seasonings (I like to add Mrs. Dash) and cook until softened, about 5–10 minutes, depending on your preference.
Step 4
Once veggies are cooked, added the chicken back in and warm up another 2–3 minutes.
Step 5
To finish, top with dried parsley (or fresh, if you like) and red pepper flakes and serve warm with rice or place into meal prep containers.
