Ingredients
8 servings
2 lbchicken breast
or thighs cut into thin strips
2 tablespooncornstarch
for coating
4 tablespoonscooking oil
high heat, I recommend avocado oil as a healthy high heat-friendly oil
4 teaspoonsfresh ginger
minced
2 tablespoonfresh garlic
minced
4 bunchesgreen onions
cut into 2 inch pieces, white parts kept separate
4 tablespoonshoisin sauce
2 teaspoonsesame oil
½ teaspoonblack pepper
1 cupsoy sauce
1 cupwater
4 teaspoonscornstarch
1 cupbrown sugar
Instructions
Step 1
1. Combine the sauce ingredients in a bowl, stirring until the cornstarch and brown sugar are dissolved, and set aside.
Step 2
2. Sprinkle the cut up chicken with the cornstarch and toss to coat.
Step 3
3. Heat a wok or heavy frying pan over high heat. Once hot, add the oil.
Step 4
4. Add the chicken and fry until cooked through, about one minute. Add the garlic and ginger and fry for another 30 seconds.
Step 5
5. Add the sauce and white parts of the green onions and simmer until thickened, about a minute. Add the remaining green onions, stir to coat and remove from heat (the green onions should remain a little crispy).
Step 6
6. Serve immediately with steamed rice.
