Instructions
Step 1
Prep ingredients. Wash produce. Dice poblano pepper. Drain and rinse beans. Quarter lemon.
Step 2
Heat pan on medium heat. Add olive oil and peppers. Season with salt and pepper. Cook until softened.

Step 3
While peppers cook, mix taco seasoning with 1/3 cup water
Step 4
Add beans to pan once peppers are softened and add seasoning mix (not all, just enough to add to taste). Cook until sauce thickens and beans are heated through.
Step 5
Pour bean and pepper mixture into a bowl and wipe out your pan. Return to heat and spray with Pam.
Step 6
Now prep your quesadillas. Cover half a tortilla with Mexican blend cheese. Then add your bean and pepper mixture on top. Cover that with some Monterrey Jack cheese and then fold the other half of the tortilla over.

Step 7
Add your quesadillas to pan and cook until browned and cheese melted.
Step 8
To make crema, combine sour cream with some fresh lemon juice, salt, pepper and just enough water to thin out the consistency.
