Maple Dijon Glazed Salmon

Not my original recipe - found elsewhere online but cannot remember source. It is DELICIOUS and tangy. I suggest making extra glaze and also spreading it over the veggies when putting back in to broil.

Step 1
Heat oven to 125
Step 2
Line baking sheet with aluminum foil and spray with cooking spray
Step 3
Spread sweet potatoes and broccoli on sheet and drizzle with oil and season with salt and pepper

Roast veggies for 10-15 minutes. Sweet potatoes should be near fork-tender
Step 5
Prepare glaze - in small bowl mix together maple syrup and Dijon mustard. Season with salt and pepper.
Step 6
Remove veggies from oven. Change oven setting to BROIL HIGH. Spread veggies to outside of tray to make room for salmon in the center.
Step 7
Place salmon in center of tray leaving about 1/2 inch to help cook evenly. Drizzle glaze over salmon.
Step 8
Broil 7-10 minutes until both salmon and veggies are fully cooked.
