Nam khao is a popular salad from Laos, the crispy rice with the fresh herbs, the crunchy nuts and the tangy dressing tastes incredible! 😋
Usually it’s served with som moo, a sort of sausage but I simply skipped it. 🙌

Crispy Rice

2.5 Cupsbasmati rice
cooked

2 Tbspthai red curry paste

4 Tbspneutral cooking oil

3 tspsugar

3 tsplight soy sauce
or vegan fish sauce
Dressing

2 Tbsplight soy sauce
or vegan fish sauce

1chili pepper
spicy, minced

2cloves garlic
minced

0.5juice of lime

2 Tbspsugar

¼ cupwater

Instructions
Step 1
Mix cooked rice, curry paste, oil sugar, and soy/fish sauce together. Spread evenly over parchment on a rimmed backing sheet and bake at 200C/400F for 30mins, stirring halfway through.
Step 2
While rice is cooking make dressing by mixing light soy sauce/fish sauce, diced chili, diced garlic, lime juice, sugar, and water.
Step 3
Rinse and chop herbs, toast coconut, toast and chop peanuts, fry shallots (ATK has a great microwave method). Rinse lettuce leaves and let dry.
Step 4
When rice is crispy, add to large bowl and mix in herbs, coconut, peanuts, and shallots. Toss well with dressing, then serve in lettuce wraps.
