Wild rice with orange, beet, & goat cheese

Savoury and nutty, earthy and sweet, vegetarian, lactose and gluten free, tree nut free, and easily adjusts to the number of people you have at the table. The goat cheese, if mixed while the rice is warm, lends a creaminess to the dish that resembles risotto. Don't skimp on the salt! Taste as you go, salt is key to this dressing.
I make it as a main dish, but it can be served as a side with a citrus-marinated grilled chicken or fish. All measurements are approximate. I cook for a family which has anywhere from 5-12 people at the table, at least three of whom are under the age of 10. This is one of the most versatile recipes in my book.

2Navel oranges
juiced
3 Tred wine vinegar
4 ttoasted sesame oil
1 Ttoasted sesame seeds
2 tground ginger
sub fresh if possible
1 tchili powder
salt
to taste

Instructions
Step 1
Roast the beets using your favorite method. I slice them into 1" rounds and wrap handfuls in tin foil before baking at 425 for about an hour.
Step 2
Peel oranges and segment. No pith or membrane. Cut into 1" pieces and set aside.
Step 3
Cook the wild rice as instructed. I prefer Lundberg for flavor and texture.
Step 4
While the rice is cooking, assemble the dressing. Add all the ingredients and whisk until combined. Taste and adjust to your preferences.
Step 5
When rice is done, pour into serving bowl and drizzle dressing in, mixing to combine thoroughly.
Step 6
Add around half the goat cheese, crumbled, mixing to barely combine.
Step 7
Gently stir in the beets and orange segments
Step 8
Serve with a handful of arugula, garnished with more crumbled goat cheese and sesame seeds.
