300gshelled edamame
1carrot

2Scallions
diced
0.5red bell pepper
sliced
0.5cucumber
sliced
0.5avocado
diced
0.5mango
diced
½ cupmint leaves
chopped
½ cupcoriander leaves
chopped
2 Tbspcrushed peanuts
Dressing
Instructions
Step 1
Soak the glass noodle and edamame in boiling water according to your packet instructions. Drain and rinse with cold water until cold.
Step 2
Add all the ingredients to a mixing bowl. Add the sauce ingredients to a jar, stir well and add to the bowl
Step 3
Mix and enjoy
