Instructions

Brisket

Step 1
Heat the oven to 160°C regular bake.
Step 2
Cut the brisket into pieces roughly 8cm × 5cm.
Step 3
In a large heavy-based Dutch oven, heat the olive oil. Brown the brisket in batches on all sides then set the beef aside, the meat should not be cooked through at this point.
Step 4
Add the garlic and spices to the Dutch oven and fry briefly until aromatic. Add the brisket, salt, chipotle sauce, barbecue sauce and enough stock to cover the beef. Bring to a simmer, cover and place in the oven for 4 hours. Turn the pieces of beef halfway through cooking. If it becomes dry, add a little water. Once the beef is tender and falling apart, remove from the oven and pull apart using two forks. The liquid should have reduced and thickened. If not, place on the stove top and reduce to a thickened sauce.

Guacamole and Salsa

Step 5
In two separate bowls, mix together guacamole and salsa ingredients.

To Serve

Step 6
Place a layer of tortilla chips onto a baking sheet. Top with ⅓ of the grated cheese, black beans and pulled beef. Top with remaining tortilla chips, cheese, beans and pulled beef. Grill for 3-5 minutes or until the cheese has melted. Spoon over any leftover brisket sauces then top with chipotle hot sauce, guacamole and salsa.
