Instructions

Step 1
Slice onion and pack into jar
Step 2
Add all other ingredients to a small pot, and bring to a simmer

Pour from the pot into the jar until onions are submerged.
Step 4
Top off with additional cider vinegar if needed
Step 5
Let the jar cool on the counter for about an hour, then store it in the refrigerator. Onions will be ready to eat after 2-3 hours, but are best after a day or two.
