1 ½ cupPancake Waffle Mix
Buttermilk

1 cupWater

½ cupBlack Beans

4 cupsGreen Leaf Lettuce

Instructions
Step 1
1. Brown the ground beef in a frying pan over medium-high heat. Once browned, add taco seasoning. Remove from heat and keep warm.
Step 2
2. Heat waffle iron. Combine pancake mix and water.
Step 3
Spray waffle iron and pour ¼ of the batter onto the waffle iron. Cook and repeat.
Step 4
3. Top each waffle with ¼ of the browned ground beef, two tablespoons black beans, 1 cup lettuce, ¼ cup tomatoes, 1 Tbs Greek yogurt, 1 Tbs salsa, 1 Tbs green onions, 1/2 Tbs sliced olives, and 25g chopped avocado.
