Instructions

Step 1
Cook the spaghetti according to the package instructions until it's al dente. Reserve 1 cup of the pasta cooking water, then drain the spaghetti and set aside.
Step 2
While the pasta is cooking, heat a large pan over medium heat and add a splash of water (or a tablespoon of olive oil, if you prefer). Add the diced onion and bell pepper, sautéing until they begin to soften - this should take around 5 minutes.
Step 3
Add the minced garlic to the pan and continue to sauté for another minute, until the garlic is fragrant.
Step 4
Reduce the heat to low, then add the hummus to the pan, stirring well to combine it with the veggies. If the hummus is too thick, gradually add the reserved pasta water until you get your desired sauce consistency. You want it to be creamy and easily coat the spaghetti.
Step 5
Add the cooked spaghetti to the pan, tossing well to ensure all the pasta is coated in the creamy hummus sauce.
Step 6
Stir in the chopped fresh oregano and parsley, saving a little for garnish.
Step 7
Divide the spaghetti among four plates, garnishing each serving with a sprinkle of the remaining herbs.
Step 8
Serve hot, and enjoy this delectable, hearty, and healthy vegan dish!
