Step 1
Preheat the grill or broiler to high. Coat chicken with 1 tbs of oil and then season with salt & pepper. Broil or grill 3-4 mins per side to brown. Turn down the heat. Close the lid (or cover with foil if broiling) and cook for another 6-8 mins until the meat is cooked through and no longer pink (internal temp of 165). Remove from heat to rest for 5 mins, covered in foil, then slice into ¼” slices. On a large platter arrange mozzarella, tomatoes, chicken & basil. Drizzle with remaining olive oil, balsamic vinegar and salt & pepper to taste.
