Instructions
Step 1
Heat oil in a large skillet or sauté pan over medium heat.
Step 2
Add chopped onions & celery. Sauté for 3-5 minutes or until softened. Add garlic and sauté 1 minute until fragrant.
Step 3
Add rice, hot sauce & broth. Stir, then bring to a low boil.
Step 4
Lower the heat and simmer for 15 minutes, or until broth has absorbed the rice and is tender. (BE SURE TO STIR A FEW TIMES SO RICE DOESN'T STICK TO THE BOTTOM)
Step 5
Fluff rice mixture with a fork when done.
Step 6
Add chicken, yogurt, ranch seasoning and extra hot sauce. Fold everything together until combined.
Step 7
Add salt & pepper to taste and any additional toppings.
Leftovers
Step 8
Store leftovers in the fridge for up to 5 days.
