Instructions
Step 1
Prepare the milkfish. Start by cleaning and gutting. Rinse it well under cold water and pat it dry with paper towels. Make your desired cuts of the fish.

2. Prepare the brine solution. In a bowl, combine 1 liter of water and 1/2 cup of salt. Let the bangus soak for 30 minutes.
Step 3
Use a regular pot or a pressure cooker. Place all remaining ingredients in 2 layers. Cover the pot or the pressure cooker and allow to cook for an hour in low heat.
Step 4
Once cooked, transfer the Spanish-style milkfish to a serving platter. Garnish with fresh herbs like parsley or cilantro, and squeeze some fresh lemon or calamansi juice over the fish for an extra citrusy kick and serve alongside steamed rice. Or you may preserve it by storing into a sterilized jars.
