Garlic Rosemary Focaccia

This is the easiest focaccia recipe ever! I’ve made it countless times and it has turned out perfect every time. You can either utilize the same day method or the overnight method. For the same day method, you’re going to let the dough rise for 3-4 hours at room temperature with a 45 min second rise at room temperature. For the overnight method, you’re going to let the dough rise in the fridge for 12-18 hours (24 hours preferably) with a 4 hour second rise at room temperature. Both methods are great! The overnight method yields more pillowy results and is recommended but I totally understand needing to satisfy a focaccia craving immediately! You can top the focaccia with whatever you please but you can’t ever go wrong with fresh rosemary and garlic. So delicious!

Instructions

Yeast Mixture

Step 1
In a cup, combine the warm water, yeast and sugar. Mix and leave to sit for 5 minutes.

Focaccia Dough (part 1)

In a second bowl, add the flour, salt and your yeast mixture.

Mix until you get a wet dough with no dry bits.

Cover and leave to rest in the fridge overnight (12-18 hours) or at room temperature for 3-4 hours (same day method). You should see large bubbles form and the dough triple in size. The dough should also be very jiggly!

Infused Olive Oil

Step 5
In the meantime, combine olive oil, rosemary and minced garlic into a little cup. Muddle the rosemary and garlic into the olive oil for a few minutes to release the aromatics.

In a parchment lined pan, pour 1/3 of the olive oil mixture into the pan and evenly grease it.

Focaccia Dough (part 2)

Step 7
After the initial proofing of the focaccia, remove the dough and place it into pan.
Step 8
Slightly stretch out the dough to cover the majority of the pan.

Leave it for a second rise for 45 mins at room temperature (for the same day method) and 4 hours (for the overnight method).
Step 10
After the second proofing, evenly pour the rest of your infused olive oil on top of the dough.
Step 11
Thoroughly cleanse your hands and start dimpling the dough to create small holes in the dough.

Lightly salt the top of your focaccia.

Preheat your oven to 425°F. Bake for 20-25 minutes or until golden.
