Instructions
Step 1
Simmer onion in oil with garlic, cook for two minutes (while you cut up squash).
Step 2
Add 1 tbl peppercorns into hot oil and then add cut squash and stir bottom to top (rolling stir). Cover and let steam for two minutes and then turn again (bottom to top). Now bring to simmer and fill the sink with cold water. Add giant can of diced tomatoes.
Step 3
When the squash just start to become translucent, set pot into cold water to keep the squash crisp.
Step 4
Once the whole mixture has cooled add 1 tsp oregano and 1 tsp salt. Mix and taste - season to your taste with oregano and salt.
