Cheesy Broccoli Chicken and Rice Casserole

I used leftover rotisserie chicken and frozen broccoli, another cup of cheese (but we're cheese-aholics), and added a scoop of Greek yogurt and half-and-half instead of milk...just using what we had. The kids LOVED it and my son went back for seconds. It made enough for dinner plus lunches for the week. I'll definitely add it to the rotation every once in a while. I added more seasoning than it called for, too. Just listened to my ancestors til they told me to stop with salt and pepper...and it was delicious.

Yum! I added some garlic powder, onion powder, and extra pepper once I added the rice in. I may have also done some extra cheese. I added some panko on top in a thin layer prior to putting in the oven. I misread the instructions and folded all of the cheese into the casserole, but it still turned out great

The taste was okay, but way too heavy for me. I was expecting a texture similar to brocoli mac and cheese, probably need to reduce the water content for that and increase the milk.

Super easy recipe. It's just out of the oven, giving it some time to cool down, but it smells great.

I added some spices. Next time, I will add a few dashes of hot sauce and also top it off with panko or crushed potato chips. Fresh herbs would be a lovely addition, too.

My partner thought he was helpful and cooked the rice in advance. So we skipped cooking it and just added the broccoli with less broth then added the rice and milk etc. Turned out amazing!

Don’t need as much cheese - recommend using half

Omg I LOVE this. My Dutch oven isn't very big so I had to move some into a saucepan which was a pain but other than that it was so easy and so delicious. It's going in my regular rotation
