Zucchini fritters with Tzatziki

Instructions
Step 1
Squeeze the water from the zucchini and cucumber and set aside separately.
Step 2
In a bowl mix together the zucchini, parmesan, flour, egg, chives and season with salt and pepper.
Step 3
Heat a frying pan and add some spray oil, add a tbsp of the zucchini mixture to the hot pan and flatten slightly. Add 1-2 more depending on your pan size.
Step 4
Cook for 3-4 minutes on each side until golden, carefully flip with a spatula. Set aside and repeat with the remaining mixture.
Step 5
Mix together the greek yoghurt and cucumber, season with salt and pepper.
Step 6
Serve the hot fritters with a dollop of the simple cucumber raita.
