Instructions

Dough

Step 1
Combine all the ingredients except butter and knead using stand mixer. Add butter after dough has formed. Keep mixing on high for 5-10 minutes until elastic. Note: Kneading with hands also works! It will just take a little longer.
Step 2
Cover with wet towel or plastic wrap for 1-2 hours until it doubles in size.
Step 3
Roll dough out to 1 cm thickness, cut into 15-20 equal-sized pieces using a heart-shaped cookie cutter, cover for 15-25 minutes.
Step 4
Fry in pot of oil over medium heat (325-350 F). Transfer to wire rack to cool.

Custard

Step 5
Mix cornstarch, sugar, salt, and egg yoks
Step 6
In a medium heat pot, add milk, vanilla, and combine until just boil. Take off heat.
Step 7
Slowly add milk into eggs while mixing to avoid curdling.
Step 8
Transfer back to pot and heat on medium-low heat until thick. Keep mixing. Take off of the heat and add butter. Mix.
Step 9
Pour into bowl, cover with plastic wrap, and place in the fridge until cooled.
Step 10
Whip whipping cream with sugar and mix with the cooled custard.
Step 11
Poke a hole into the bottom of the donuts using a chopstick and insert the combined cream using a piping bag.

Brûlée

Step 12
Heat sugar and water until an amber color in a pot. Don't mix in the beginning, just gently mix the pan.
Step 13
CAREFULLY dip the donuts into the caramelizing sugar and let cool on a rack. Be careful, don't burn your hands!
Step 14
Enjoy!!!
