Turmeric Fish with Indian Rice

Ingredients
2 servings
200 gramsfish fillets
white
1 tablespoonarrowroot flour
1 teaspoonturmeric
ground or fresh
1lemon
zested and cut into quarters for serving
2 pinchblack pepper
ground
Ingredients for Indian Rice
4 tablespoonbasmati rice
raw
1 teaspoonbutter
1carrot
grated
100 gramsgreen beans
ends, trimmed and chopped into 1cm pieces
0.5onion red
thinly sliced
1 teaspooncumin
ground
½ cupsgreen peas
frozen
2 tablespooncashews
natural, toasted, to serve
Instructions
Step 1
To begin, cook rice according to packet instructions.
Step 2
Combine arrowroot, turmeric, lemon zest and pepper into a shallow bowl or plate. Coat fish in the mixture, dusting off any extra.
Step 3
Place a frying pan over medium heat and add in the fish. Cook for 2-3 minutes on each side until cooked through. Set aside and cover with foil to keep warm.
Step 4
Place frying pan back over medium heat (no need to clean out the pan) and add in butter, carrot, green beans, onion and cumin and cook for 4-5 minutes until the veggies soften. Add in the peas and cooked rice, cooking until peas defrost and it is all warmed through.
Step 5
Sprinkle over cashews to serve.
