Instructions

Step 1
Combine the black beans, pinto beans, greek yogurt, cumin, chilli powder, garlic powder, salt, and pepper in a food processor or blender. Blend until smooth and creamy.
Step 2
Transfer the bean mixture to a serving bowl and stir in half of the grated cheddar cheese, diced tomatoes, spring onions, and coriander. Mix well to combine.
Step 3
Sprinkle the remaining grated cheddar cheese over the top of the bean dip.
Step 4
You can serve the dip as is or, for a warm dip, heat it in the oven at 180°C (350°F) for about 15 minutes, or until the cheese is melted and bubbly.
Step 5
Garnish with additional diced tomatoes, spring onions, and coriander, if desired.
Step 6
Serve the bean dip with tortilla chips, pita bread, or cut-up vegetables for dipping.
