Instructions

Step 1
Combine the mixed beans, diced avocado, cherry tomatoes, red onion, lime juice, and chopped coriander in a mixing bowl. Gently toss to mix everything together.

Season the mixture with salt and pepper to taste. Adjust the lime juice and seasoning according to your preference.

Take small lettuce cups, such as Little Gem lettuce leaves, and spoon the bean and avocado mixture into each cup.
