Very simple basis for curry – you can really experiment with the veg that you like. It works well with leftovers as well – e.g cauliflower or potatoes

Ingredients

2onions
medium, sliced
1chilli
seeded
1 tspturmeric
¼ tspginger powder
½ tspsugar
0.5cabbage
peas carrots
plus additional veg
vinegar
Instructions
Step 1
1. Brown the onion 10 mins
Step 2
2. Add the chilli and spices and fry off for 1 minute – adding a little water if necessary
Step 3
3. Add the cabbage/veg, and a little more water – cook for 15 mins
Step 4
Add splash of vinegar at end
