Instructions
Step 1
Heat broiler to high. Wash, trim, halve, and slice zucchini into half moons. Toss on a baking sheet with olive oil and half the Italian seasoning. Broil on high for 5-7 minutes.
Step 2
Meanwhile, cook chicken sausage on medium-high in a drizzle of olive oil and with remaining Italian seasoning. Cool until brown and broken into small pieces. 4-6 minutes.
Step 3
Bring a large pot of water to a boil. Add spaghetti and boil until al debate, about 9-11 minutes. Stir occasionally. Reserve 1/2 cup pasta water before draining. Then set pasta aside, off the heat.
Step 4
While pasta cools, stir crushed tomatoes, chicken stick concentrate, and sugar into pan with the sausage. Season generously with salt and pepper. Simmer 5-7 minutes.
Step 5
Finally, stir in sour cream and butter into the sauce. Add zucchini and drained spaghetti. If needed, add pasta water until pasta is thoroughly coated. Sprinkle with Parmesan cheese and serve.
