1kgMutton

6Onions
medium thinly slices

2 bulbGarlic

4 clovesGarlic
crushed

3 inchesGinger
root, crushed

3 pcsGreen chillies

⅓ cupMustard oil
take out a tablespoon for handi

1 tspChilli powder

1 TbspKashmiri chilli powder

1 tspTurmeric

1 TbspCoriander powder

1 TbspCumin powder

1 TbspGaram masala

Salt
to Taste

2Bay leaves

Instructions
Step 1
In a bowl combine, onions, ground spices, salt, green chillies, crushed ginger garlic and meat. Mix well.
Step 2
Heat up oil until smoky. Turn off the heat and add whole spices.
Step 3
Pour in meat. Mix well and leave to marinate or cook straight away. (I left for 3 hours in refrigerator)
Step 4
Add tbsp in clay handi and spread on bottom. Add prepared meat. Seal the lid with kneaded dough.
Step 5
Place on charcoal and cook for around hour or hour & half. Shake the handi after 15-20 minutes in intervals.
Step 6
Once done. Remove from charcoal and leave for around 15-20 minutes before opening the lid.
Step 7
Open the lid carefully and garnish with fresh chopped coriander. Enjoy!
