Instructions
Step 1
* Preheat the oven to 200°C (fan-assisted).

* Peel the garlic cloves and place them in a small baking dish.

* Drizzle enough olive oil over the garlic cloves to cover them, and add 2 sprigs of rosemary. Cover the dish with a lid or aluminium foil.

* Roast in the oven for 35-40 minutes or until the garlic is soft and golden.

* Once ready, allow the garlic to cool slightly, and then transfer it to a food processor (reserve the oil for other uses).

* Add yogurt, lime juice, salt, and pepper to the food processor. Blitz until the mixture is smooth. Taste for seasoning and adjust according to your preference.

* Chill the dip in the refrigerator for at least 30 minutes.
