Instructions
Step 1
Season diced chicken with salt, pepper, garlic powder, and onion powder
Step 2
Add 1 TBS olive oil to a large oven safe skillet and heat over medium-high heat. Add ⅓ of the chicken pieces, and cook for 6-7 minutes, until the center is no longer pink. Remove chicken, and set aside. Continue cooking chicken in batches until all chicken is cooked.
Step 3
Add 1 TBS olive oil, and 1 TBS butter in the empty skillet and heat over medium high heat until the butter is melted
Step 4
Once melted, add gnocchi to the skillet and stir until they are evenly coated. Cook, stirring occasionally 5-6 minutes until gnocchi are golden-brown.
Step 5
Add chicken broth to the skillet and reduce heat to medium. Let the broth reduce, stirring occasionally until thickened broth coats the gnocchi.
Step 6
Add marinara sauce and cooked chicken back to the skillet and stir to combine.
Step 7
Add parmesan, and mozzarella to the top of the chicken and gnocchi mixture.
Step 8
Place skillet in a pre-heated oven and broil until cheese is melted and bubbly.
Step 9
Let rest for 5 minutes, garnish with fresh torn basil, and serve.
