GREEN CHILE POLENTA

Instructions

Step 1
Heat oven to 400 degrees and oil an 8-by-8 casserole.
Step 2
In a saucepan, cook onion and garlic in oil for 5 minutes. Add water, milk and salt, bring to a boil.
Step 3
While whisking, sprinkle cornmeal into liquid. Lower heat and cook 10 minutes, stirring constantly. Mixture will be very thick.
Step 4
Spread half the polenta into casserole. Sprinkle with half the chile, corn and cheese. Repeat with remaining ingredients and bake, uncovered for 30 minutes or until puffed and cheese browns.
Step 5
Cool slightly and cut into wedges. Meanwhile, warm the green chile sauce and serve over wedges.
