Chicken Poppyseed Pasta Salad

This is great for a hot summer gathering! Chilled pasta with rotisserie chicken, celery and creamy and slightly sweet poppyseed dressing. I got this originally from my boss but have made slight changes to it to better suit my taste buds.

Instructions

Step 1
Cook pasta to package instructions just beyond Al dente. Rinse in cold water and drain well. Place in large bowl with remaining ingredients. Stir well. Refrigerate overnight before serving.
Step 2
I add 1/4 to 1/2 cup water to the empty salad dressing bottle, shake well and add to the mixture. It will appear watery. Don’t worry! Overnight, the pasta and dried cranberries will soak up a lot of that excess liquid. This will help it become the right level of sauciness the next day. I use Barilla Protein + pasta cooked for ten minutes and Briannas Poppyseed dressing. You can also substitute two chicken breasts for the rotisserie chicken. I have just found that Costco’s rotisserie price is really good and I can make two meals out of it for my family of 4. It also adds a nice layer of additional flavor to the dish.
