Instructions
Prepare the Tteok:
Step 1
If the tteok is hard or refrigerated, soak it in warm water for about 15 minutes to soften. Drain before using. This will speed up the cooking process.
Make the Sauce:
Step 2
Heat a skillet or frying pan over medium heat and add the chopped bacon. You don't usually need to add any oil because bacon releases its own fat as it cooks.
Step 3
Stir or toss the bacon pieces occasionally with a spatula to ensure even cooking. Continue cooking until the bacon reaches your desired level of crispiness.
Step 4
Once the bacon is crispy and golden brown, remove it from the pan, allowing any excess grease to drain back into the pan.
Step 5
Place the cooked bacon on a plate lined with paper towels to absorb any remaining grease.
Step 6
In the same pan with the residual bacon grease, add in the chopped onions. Saute until the onions turn translucent.
Step 7
Add in the minced garlic and saute until fragrant.
Step 8
Combine the water, heavy cream, gochujang, sugar, and gochugaru. Stir well to dissolve the ingredients.
Add the rice cakes,

Add the drained rice cakes.

Bring the sauce to a boil over medium-high heat, then reduce the heat to medium-low and simmer for about 10-15 minutes, or until the sauce thickens and becomes glossy and the tteok becomes tender and chewy. Stir occasionally to prevent sticking.
Step 11
Gradually add the grated Parmesan cheese, stirring continuously until the sauce becomes smooth.
Step 12
Top with shredded mozzarella cheese and green onions. Allow for the cheese to melt for a few minutes.
