Ingredients
4 servings
6 ozvermicelli
or thin spaghetti, uncooked
¼ cuprice wine vinegar
2 Tbspdark sesame oil
divided
1 Tbspvegetable oil
2 tsphoisin sauce
1 tspsoy sauce
1 Tbspfresh ginger
minced
1garlic clove
minced
5 cupsloin of pork
cooked, roast, cut into thin strips, see roast loin of pork recipe
0.5 lbfresh spinach
3 Tbspsesame seeds
toasted
salt
to taste
pepper
to taste
Instructions
Step 1
1. Cook pasta according to package directions; drain. Place pasta in a large bowl.
Step 2
2. Combine vinegar, 1 Tbsp. sesame oil, and next 5 ingredients in a small bowl; stir well. Pour half of dressing over pasta, tossing to combine.
Step 3
3. Heat remaining 1 Tbsp. sesame oil in a large skillet over medium-high heat for 1 minute. Add pork, sauté 3 to 5 minutes or until browned. Add pork to pasta mixture, tossing gently to combine.
Step 4
4. Remove stems from spinach. Cut spinach into thin strips. Cook in a large skillet over medium-high heat 3 to 4 minutes or just until spinach wilts. Add spinach to noodle mixture. Sptinkle with sesame seeds, and pour remaining dressing over pasta; toss gently to combine. Add salt and pepper to taste. Serve warm.
