Instructions
Step 1
In a small bowl, mix spices together. Divide by half and set half aside. Dice chicken into small chunks. Place chicken in a bowl and rub with seasonings and 1/2 of lemon juice. Allow to marinate in refrigerator a few hours.
Cooking
Step 2
Once marinated, drizzle oil and sauté chicken in skillet until browned. Transfer to plate.
Step 3
*We use Rice Cooker* Add uncooked rice, broth, remaining lemon juice and remaining seasoning all into rice cooker (6 cup rice cooker). Add in diced and cooked chicken. Stir. Start rice cooker and allow to cook (typically takes about 30 min) until liquid absorbed and rice fluffy. Garnish with cilantro and serve with sour cream.
