Ingredients

Sauce Seasoning
1 partsalt
ground
1 partground pepper
0.33 partgarlic salt
smoked paprika
paprika
cayenne pepper
ground coriander
tumeric
ground oregano
Chicken seasoning
The Sauce
Instructions
Step 1
Put all the chicken legs in a bowl, rub the olive oil and chicken seasoning in. Set aside, ideally put in the fridge and let it marinate for a couple of hours

Mix all sauce seasoning ingredients together in a ramekin and set aside.

Step 3
Prep and mix all ingredients for the sauce in a large oven proof pan. Add the sauce seasoning and give it a quick stir.

Brown off the chicken leg skin in a frying pan and add to the sauce pot

Put the pot in the oven at 200c for 1hr 15min or until chicken is at least 165f internal temperature. The longer you keep it in the oven the more tender and fall off the bone the chicken will be. It will also allow more time for the flavours of the sauce and chicken to mix.

Although this is great on it’s own, it also pairs great with potatoes or rice.

For my pot, I used a cast iron Dutch oven. It can be put straight in the oven and I find it gives a much better cook. I picked mine up from Amazon for about £50, a great deal IMHO.
