Instructions

Step 1
Cut all your tomatoes into small pieces and set aside. Regarding San Marzano tomatoes, you can use them fresh or from a can.

In a pan over medium low heat, drizzle extra virgin olive oil, add garlic clove and one very small chilli. Sizzle for 90 seconds.

Add all your tomatoes, season with salt, lower the heat to minimum, cover with a lid and cook for about 45 mins, stirring occasionally.

Step 4
Blend your sauce with a blender and filter with a sieve. Add your sauce back to the pan over low heat.

In the meantime, boil your paccheri pasta in some salted water for the time indicated on the package, drain and mix it with your sauce.
Step 6
Toss well over the heat to combine all the flavours together adding some pasta water if necessary.
Step 7
Turn heat off, add butter and grated Parmigiano and stir until melted. Serve with some fresh basil leaves on top. Buon appetito!
