Instructions

Step 1
In a blender add your cherry tomatoes, almonds, burrata cheese, anchovies and season with a pinch of salt, pepper and saffron. Add a drizzle of extra virgin olive oil and mix everything until smooth.
Step 2
If the sauce looks too thick, simply add a little bit more olive oil.
Step 3
In the meantime, boil your pasta in some salted water for the time indicated on the package, drain and add it to a bowl.
Step 4
Add your sauce and mix your pasta very well, adding a couple of spoons of pasta water if necessary.
Step 5
Finally, in a food processor, add your grated Parmigiano cheese and about 6/7 leaves of fresh basil and mix everything for about 30 seconds.
Step 6
Serve your summer pasta with some of your basil Parmigiano on top and, optional, some chopped pistachios.
