Vegan Miso Salmon (its made from tofu!)

Sometimes I see super non vegan recipes that look yum and think, well there’s no reason why I can’t make that vegan 🤷♀️
So I whipped up this miso tofu and it’s suuuper delish, fairly simple, high protein and amazing served with rice and veggies!

Instructions
Step 1
Slice the tofu into 4 “fillets” then thinly slice diagonally across, about 3mm apart as seen in the video. I used two wooden spoons on either side of the tofu to stop the knife from cutting the tofu in half.
Step 2
Mix together the rest of the ingredients to make your marinade and then marinate the tofu for a few hours or overnight. Make sure to get the marinade right in-between all the lil slices - I did so by placing the tofu over a round glass to expose all the slices
Step 3
Bake in the air fryer for 12 mins at 200C or for 25 - 30 mins at 200C in the oven
Step 4
Serve with rice, stir fried veggies and top with extra sesame oil, tamari, sesame seeds and spring onion
