Chinese Eggplant Dish

We always enjoyed ordering this dish at Chinese restaurants, and we finally discovered a recipe that tastes very similar to the authentic version! We use ground turkey instead of pork as a healthier alternative.

Step 1
Slice eggplant into short, thin slivers. Prepare garlic and ginger, set aside.
Brown ground turkey in skillet.

fresh ginger2 tablespoons
Step 2
Heat oil in large, deep skillet (not the skillet with the ground turkey). Add eggplant slivers. Stir and cook until super tender. Add 2 T soy sauce. Add an additional 1 T oil to skillet. In the separate skillet with ground turkey, drain excess water. Add garlic, ginger and let cook together a few minutes. Then add remaining sauces.
Step 3
Using the larger skillet, combine the ground turkey mixture with the eggplant mixture, adding in green onions. Enjoy over rice!
