Step 1
Halve the potatoes and cook them in a saucepan of lightly salted boiling water for 10-15 minutes of until tender. Drain well. Heat the oll in a wok or large, nonstick frying pan. Add the prawns, crushed garlic, finely siced spring onions and cajun seasoning and stir-fry for 2-3 minutes or antil the prawns are hot. Stir in the potatoes and cook for 1 minute. Transfer to a serving dish. Peel, stone and dice the avocado and stir into the salad. Top with the alfalfa sprouts and serve. For cajun chicken wings with potato & avocado salad, mix together 2 tablespoons vegetable oil and 2 teaspoons cajun seasoning. Marinate 12 chicken wings in the mixture for at least 1 hour. Put the chicken wings on a foil-lined baking sheet and cook under a preheated hot grill for 8-10 minutes until golden and cooked through. Prepare the potatoes as above and stir-fry in a wok or nonstick frying pan with 1 crushed garlic clove, 4 sliced spring onions and
2 teaspoons cajun spice. Mix with the avocado and serve with a wedge of lettuce and the chicken wings.
