Instructions

Step 1
Preheat oven to 350 and spray 9 x 13 baking dish with cooking spray
Step 2
Drain spinach of excess water in colander (press with spatula
Step 3
Place eggs in shallow bowl & bread crumbs on a plate
Step 4
Dip chicken in egg, then bread crumbs. Heat oil in large skillet
Step 5
Add chicken to skillet and season with salt and pepper.
Step 6
Brown chicken, about 4 mins each side, and then place in baking dish.
Step 7
Mix spinach with cheeses, set aside.
Step 8
In small saucepan, melt butter over med heat. Add flour & cook, stirring for 1 minute
Step 9
Whisk in milk & broth and cook until slightly thickened, about 3 to 5 mins.
Step 10
Season with salt & pepper. Pour sauce over and around chicken, then spread spinach mixture on top of chicken. Cover with foil & bake 20 mins until bubbly.
