1garlic clove
20golive oil
700gtomato passata
or sugo
50gtomato paste
30gwater
20gworcestershire sauce

1 Tbspmeat stock paste
1 tspdried oregano
1 tspdried basil
⅛ tspground cinnamon
½ tspdried chilli flakes

broken into pieces
Instructions
Step 1
Place onion and garlic into mixing bowl and chop 3 sec/speed 9. Scrape down sides of mixing bowl with spatula.
Step 2
Add oil and cook 5 min/100°C/speed 2, without measuring cup
Step 3
Add passata, tomato paste, water, Worcestershire sauce (optional), stock paste, oregano, basil, cinnamon, chilli flakes and black pepper. Insert simmering basket into mixing bowl, weigh mince into it and cook 15 min/120°C/speed 2.
Step 4
Stir mince with spatula to break up and ensure even cooking, then cook for a further 15-20 min/120°C/ speed 2 or until cooked through.
Step 5
Transfer mince and sauce into a large bowl and stir to combine, then serve as desired (see Tips).
