Kofta & Potato Stew with Vermicelli Rice

This stew is served with Vermicelli Rice & takes less than 30 minutes to make from start to end! It’s perfect for all you busy Mums & I guarantee your kids are going to love it! 😍
It’s simple yet delicious & filled with flavour! I’ve made it in my pressure cooker but you can make it on the stove if you don’t have one, it will just take longer to cook 💗

Ingredients

follow my previous recipe if you can’t purchase it already made
3 Tbsolive oil
1.3kgPotatoes
700gPassata Sauce
2 TbsTomato Paste
1.25 LWater
2 ½ tspSalt
1 ½ tspblack pepper
1 tspcumin
Vermicelli Rice
Instructions
Kofta & Potato
Step 1
Roll the Kofta into even size balls

Lightly sear the Kofta balls on all sides in Olive Oil over high heat.

Peel, wash and evenly chop the Potatoes and add them in.

Add the Passata Sauce, Tomato Paste & Water.

Add the Seasonings and give them a good mix.

black pepper1 ½ tsp

Step 6
Pressure cook for 13 minutes on LOW (or rice option). Otherwise cook on the stove until Potatoes are tender. You may require more water, add and season accordingly.
Vermicelli Rice
Step 7
Wash the Rice until the water is clear.

Toast the Vermicelli Rice in Ghee over high heat until golden.

Add the strained Rice and give them a good mix.

Cover with water and season with salt.

Bring to a light simmer, lower the heat, cover and cook for 13 min.
Step 12
Turn the heat off and allow to sit covered for 5 minutes before serving.
