Ingredients

raspberries
or strawberries or blackberries

1 blockvegan feta

1cucumber

2 sachetscouscous

0.5 bagrocket leaves

1can chickpeas

Instructions
Step 1
cook your couscous according to instructions on the package, i used two of Tesco’s lemon and coriander couscous satchels, about 220g of couscous, but you can use any available to you. allow couscous to cool.

Step 2
in the mean time cut your cucumber into slices, or triangles like i did, and cut your berries into small chunks


Step 3

in a bowl prepare your dressing










Step 4

crumble your feta and mix it with some of the dressing and extra thyme. set this aside for now.

Step 5
drain your chickpeas and add them to a large bowl

Step 6
now add in your cucumber, berries and rocket leaves. mix the ingredients together.



Step 7
now add in the couscous, feta and remaining dressing


Step 8
additionally, season to taste if so desired and serve with toast or barbecued vegan sausages
