Instructions

Step 1
Preheat oven or toaster oven to 375 with rack on the bottom.
Step 2
Mash the half banana in a medium bowl using a fork.
Step 3
Add the egg yolk, vanilla, and salt. Then mix till we’ll combined.
Step 4
Add the oat flour, all purpose flour, baking powder, cinnamon, and protein powder. Stir until we’ll combined. If it is too thick you can add almond milk. You want it to be more batter like than liquid.
Step 5
Add to oven safe bowl and cover loosely with aluminum foil. Bake for 5 mins. Then taken off the foil and reduce the heat to 350 degrees. Continue to bake for 10 ish mins. If the sides are starting to look golden, it might be over baked.
