Dressing
Instructions
Step 1
Cut the whole ube into 1 inch cubes. Coat in cornstarch and deep fry in 350*F oil for approximately 5 minutes, or until crispy.
Step 2
Drain the ube on an absorbent paper towel. While still hot, season with salt and sugar.
Step 3
For the dressing, smash the salted duck egg in a bowl using a spoon or fork. Then add the mayo, honey, vinegar, and pepper. Mix until well combined.
Step 4
Assemble the salad in a bowl and coat with dressing.
Step 5
Best served while ube is warm.
