SUMMER RAIN: AN EXCUSE FOR RAMEN🍜
For the soup, serves 4:
-large thumb of ginger cut into rounds
-5 spring onions (only the white parts, use the green to garnish)
-5-6 garlic cloves
-1 large carrot
-1 tbsp rice wine vinegar or mirin
-3 tbsp soy sauce or tamari
-1 tbsp
sesame sauce
-1 tsp sesame oil
-1 tsp chilli oil
-1500ml chicken stock… add all ingredients to pan and simmer for an hour.
Mix a ladle of broth with 3/4 tsp miso paste in each both and serve with noodles (I used rice noodles, not traditional but I needed to make it GF), an egg, chicken Breasts or thighs: beaten flat, season with salt, pepper, pinch of Chinese 5 spice, garlic granules and onion granules fried over medium with a tsp of neutral oil until golden, fried shiitake mushrooms and any other veg your heart desires, ENJOY🫶🥕
