2 tablespooncornstarch

1 teaspoonsalt

1 teaspoonblack pepper

4 tablespoonsolive oil

2 tablespoonsminced garlic

3 tablespoonsdried parsley

2 tablespoonsunsalted butter
For the sauce
Instructions
Step 1
Dry the chicken cubes with paper towels and toss them with the cornstarch, salt, and pepper in a bowl.




Step 2
Heat the oil in a skillet over high heat, add the cubed chicken, and cook in one layer, for about 4-5 minutes. Turn pieces of chicken and continue cooking for 3-5 more minutes.


Step 3
Meanwhile, combine the garlic and parsley in a small bowl. Add the butter and the parsley mixture to the skillet and saute for 1 minute longer.



Step 4
Use a spoon to remove the chicken to a bowl, leaving brown bits, extra parsley and garlic in the pan.
Step 5
Add the butter to the pan and cook over medium heat to melt, scraping the bits and mixing together.
Step 6
Add the cornstarch and mix together, cook for a minute or so, stirring continuously.
Step 7
Slowly add the chicken broth, whisking to combine until all broth has been added.
Step 8
Cook over medium high heat, stirring constantly until sauce has cooked down a bit and thickened.
Step 9
Combine sauce with chicken and serve over rice. Enjoy!
